For detailed instructions and the original recipe go to How Does She? I scaled the recipe a bit to fit my smaller pan since I tend to burn larger batches (and my forearms simply aren't strong enough to shake that large of a pan).
Kettle Corn
3 Tablespoons Coconut Oil
3 Tablespoons Organic Sugar (have it ready in a bowl)
1/3 cup non GMO corn
Put coconut oil and one popcorn kernel in medium size saucepan, cover and cook over medium high heat, gently moving the pan back and forth until the corn pops. Immediately stir in remaining popcorn and sugar (work fast!) cover, reduce heat to medium and constantly move pan back and forth over burner until corn is popped (if you stop the pan moving for more than a few seconds it will burn). Once the popping slows down, move off heat. Let the last few kernels pop and then transfer to a bowl. Let cool before devouring and it will get a nice crunchy exterior that is impossible to resist!
