Whole Wheat Pancake Mix


I love this pancake recipe, but I got a little tired of having to mix it up once or twice a week and finally got around to making my own mix. It's so easy, just as simple as mixing a store bought pancake mix, but much healthier.



Whole Wheat Pancake Mix

8 cups whole wheat flour (if you use store bought whole wheat I highly recommend King Arthur Flour)
2 tablespoons baking powder
1 1/2 tablespoons baking soda
2 teaspoons salt
1/4 to 1/2 cup flax seed (can also add wheat germ, chia seeds, etc...)
1 1/2 cups powdered milk (optional- you can use fresh milk if you prefer)

Mix all ingredients well and store in airtight container. I like to give the container a shake before mixing it up just to make sure contents are evenly distributed.

To make pancakes, mix:

2 cups of whole wheat pancake mix
1 teaspoon vanilla
2 eggs
2 cups of water or milk (if you used powdered milk in your mix, just add water, otherwise use fresh milk or buttermilk)

*Note, I have made this without the eggs- the texture is a bit off but it still tastes great. Print Friendly and PDF
