These little cookies are not only made from wholesome natural ingredients but are pretty darn tasty and with only 1/2 cup of honey to sweeten the whole batch, you don't have to feel guilty about serving them up to your kiddos or eating one (or three) yourself!
Honey Wheat Oatmeal Cookies
1 cube of butter, softened
1/2 cup of honey
2 teaspoons vanilla
2 teaspoons cinnamon
1/4 teaspoon nutmeg
2 eggs
1 1/2 cups whole wheat flour
1 1/2 cups oats
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup flax seed (optional)
1 cup raisins (can also add chocolate chips)
1/2 cup pecans, chopped
Preheat oven to 350 degrees
Cream together butter, honey, vanilla, cinnamon, nutmeg and eggs. Stir in remaining ingredients until well blended. Using a medium size scoop, drop spoonfuls of dough onto cookie sheet.
Bake approximately 10 minutes or until just beginning to brown on top.
Makes 2 1/2 dozen cookies.
